NO PaSTRY CrUSt QUICHE

You can eat whatever the hell you want…. you’ll be as BIG as a house but you can. I should know…. I was on my way to be that person!

Life is now about balance and wine… let’s not forget about wine, chocolate or whatever your guilty pleasure is.

The whole idea of changing the crust is to lower the calories and up the health benefits of this…. realistically it tastes better too!

Pastry (store bought about 900 calories)

Broccoli and Cauliflower Crust (less than 250 calories)

Desktop

INGREDIENTS:

1 bag of mixed broccoli and cauliflower (frozen from the supermarket)

1 egg

1 tsp garlic powder

1 tsp onion powder

pinch of salt and pepper

METHOD:

Preheat the oven to 400F

Cook the broccoli and cauliflower as per the bags directions and drain off as much water as possible. You can put it in a piece of cloth and squeeze it out or squeeze it in your hands, the more you remove now the less time it needs in the oven later.

Mix the cauliflower and broccoli and all the other ingredients together in a bowl and then press into an oven safe dish (spray it first with a neutral oil to make it easier to remove later. I used one with a removable bottom.

Cook for somewhere between 15-20 minutes or until it has dried out. You’ll know when it starts to pull away from the sides. Remember not to leave it in there too long though as you’ll be putting it back in there once you’ve filled it with your favorite fillings.

From there the world is at your feet. Fill it up with eggs and your favorite fillings, a little ham, some peppers, some spinach or maybe some feta and jalapenos. Honestly I just put eggs (from our chickens) and some spinach and peppers that were in the fridge, threw it back in the oven at 400F for about 15-18 minutes. Let it cool a little and popped it out.

Easy and good for you. This one is for lunch tomorrow, probably with some sweet potato and all for a little more than 400 calories (including the sweet potato) if I share it!
