PHO PHRIDAY

A nice bowl of Pho…. think of it as the new chicken soup but it’s better and doesn’t need to be as difficult as you’d think!

For this version you are going to make a simple but flavorsome broth and then add your noodles, greens and either precooked meat or tofu, top that bad boy with an egg and slurp away!

Ingredients

4-6 cups beef broth (use chicken or vegetable too) Totally depends on your protein choice. You can add more or a few cups of water, your personal taste and what you like is better than just following a recipe blindly!

1 big slice of grated ginger

1 Star anise

3 cloves

1 cinnamon stick

1 tsp soy sauce (we use light sodium)

2 tsp fish sauce

Method:

Combine all the ingredients above in a large pot and simmer for about 30 minutes.

Remove the solids and discard them. This is now the broth you can build on.

Add raw beef cut super thin or if you’re like us we use whatever precooked meat that is already on hand since we are trying to make this is easy as possible. Add precooked noodles (rice noodles are the best but again whatever you’ve got will work).Garnish with bean sprouts, green onions, cilantro,basil and or mint and sriracha sauce. Although not traditional at all we add a fried egg on top of ours…. because we have chickens and it tastes like the pho we had in South Korea.

Basically this is a butchered version of a traditional Pho

but it’s

not going to take 8+ hours and 20 ingredients….

but my 4 year old swears by it and it’s basic enough he can help cook it!
